Easy Savoury Veggies Crepes

Make this delicious thin crepes with filling for any meal using eggs , flour , oats , milk , salt and veggies of your choice.

Equipment

  • 1 Blender to mix
  • 1 Skillet to make crepes
  • 1 Big Bowl for batter
  • 1 Knife
  • Chopping Board
  • 1 Deep Pan for making the filling

Ingredients
  

  • 3/4 cup All Purpose Flour
  • 1/4 cup Oats
  • 3/4 cup Milk
  • 2 Eggs
  • 1/4 tsp Salt
  • 1/2 tsp Vanilla Essence
  • 2 tbsps Olive Oil
  • 1/2 cup Mozzarella Cheese
  • 1 cup Boiled Corn with Salt
  • 1/4 cup Tomatoes
  • 1/4 tsp Ginger
  • 1/4 cup Onions
  • 1/4 tsp Green Chillies to your taste add chillies
  • Coriander Leaves

Instructions
 

  • Preparing the dough:
    Combine the flour , oats , eggs , salt , vanilla essence and milk in a blender without any lumps to a smooth consistency.
  • Making the crepes:
    Heat the skillet on medium flame with 1/2 tsp oil.
  • Add 1/4 cup or ladle of batter (or little less than that if you want) to the pan , immediately tilt and rotate the pan to get the batter move out as thin as possible to form a circle shape crepe.
  • Allow it to cook to slightly golden brown. Flip the other side and cook to golden brown.
  • Transfer it to a plate .Repeat the same and make 6 crepes.
  • Preparing the Veggies for Filling:
    Heat the deep pan with 2 tbsp olive oil .add the chopped onions , fry till it is translucent.
  • Add ginger ,green chillies , chopped tomatoes cook till the tomatoes are soft .
  • Combine the boiled corn and mozzarella cheese to it . Sautee till it absorbs the moisture without burning.
  • Top it with chopped coriander leaves.
  • Rolling the crepes with filling:
    Divide the veggies filling to 6 portions , place it in the center of each crepes.
  • Roll it gently each one of them. The crepes are ready to serve.
