Veggies Cheese Pizza using cashew crumbles and no tomato sauce

Equipment

  • 1 Big Bowl to prepare dough
  • 1 Bowl Small to prepare yeast
  • 1 oven for baking

Ingredients
  

  • 2 1/2 cups All Purpose Flour
  • 1 1/2 tsps Salt
  • 3 tbsps Butter Unsalted
  • 2 tsps Active Dry Yeast check expirated dates for good results
  • 1 tsp Sugar helps yeast for proofing
  • 1 cup Warm Water not too hot
  • 1 cup Mozarella Cheese for topping
  • 1 cup Veggies your favorite veggies
  • 15 pods Cashews for making cashew crumbles
  • 1/4 cup Mozarella Cheese for making cashew crumbles
  • 1 tbsp Olive Oil for making cashew crumbles
  • 1 tbsp Lemon Juice for making cashew crumbles
  • 1 pod Garlic for making cashew crumbles
  • Salt ( little bit) for making cashew crumbles

Instructions
 

  • Prepare yeast for proofing
    In a small mix the yeast, sugar and warm milk or warm water. Let it sit for 15 minutes for the yeast to bloom. If the yeast is good it will bloom in 10 minutes.
  • Prepare the dough
    In a bowl mix the all purpose flour ,salt , yeast mixture and at the end add olive oil to the dough. Mix until the dough is soft and elastic. If you need water add a little bit for the dough to be in the softer side
  • Final preparation of the dough
    Cover the dough and rest it for 1 hour to double for immediate use. You can keep it in the fridge or freeze it for later use.
    Before using the dough bring it to the room temperature if you store the dough in the fridge atleast 30 to 45 minutes.
  • Prepare Cashew Crumbles
    Gind the cashews ,cheese,garlic pod,salt, olive oil and lemon juice in a blender coarsely
  • Add a little bit of olive oil if the flour is sticking and then roll it.
  • Roll the dough to your desired shape or to a circle.
  • Top it with cashew crumbles
  • Top it with veggies of your choice and mozarella cheese.
  • Preheat the oven then bake it at 390 F for 20 minutes. Use a pizza pan to bake.

Notes

Yeast : Unopened yeast packages store it in a cool or dry place. You can also store your yeast in the fridge or freezer. If you do store it in the freezer and need to use yeast for your baking, make sure you take out the amount you need and let it sit at room temperature for at least half hour before using.
Your yeast, it is a living organism and over time it will lose activity, even if you’ve never opened the jar or package. So if you don’t bake often, buy the smaller yeast packages rather than a big jar of yeast.
Warm water for proofing :Make sure your water is not too hot or it could kill the yeast which will cause your dough not to rise at all.
