A quick easy South Indian Side dish "Kootu Curry" with yam,coconut ,cumin and green chillies.

Ingredients
  

  • 1 cup Elephant Yam
  • 1 nos Red Chilli
  • 1/2 cup Shredded Coconut
  • 1 tbsp Shredded Coconut to add at the end in coconut oil to golden brown to add to the curry
  • 1 nos Green Chilli-
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Black pepper
  • 5 nos Curry Leaves
  • 1 tbsp Coconut Oil For Seasoning
  • 1/4 tsp Mutard seeds
  • 1/4 tsp Turmeric Powder
  • Salt
  • 1/2 cup Water for cooking Yam
  • 1/4 cup Water For Grinding

Instructions
 

  • Grinding : Grind 1/2 cup oconut,cumin, black pepper ,green chilli,and red chill to a smooth paste in a blender.
  • Cook Yam by adding 1/2 cup water ,salt and turmeric powder till soft
  • Add the ground paste mix it and cook for 3 minutes .
  • Switch off flame.
  • Season with 1 tbsp oil, mustard seeds ,curry leaves.
  • Add coconut shredded 1 tbsp till golden brown in the oil and add to the curry
  • Mix and serve.
